MENUMENTAL: Quest for fire: got a light?

Growing up in the '70s - years before the gas grill became ubiquitous - a barbecue meant cooking over charcoal. My father would build a perfect pyramid of briquettes on our rickety red grill and douse it with enough lighter fluid to drown a water buffalo. He would drop a match, cover his eyebrows and watch the flames shoot sky high. Dad's method is basically a seminar on how not to light a charcoal barbecue. Starting with the fuel, purists prefer lump charcoal to briquettes because it burns hotter and cleaner. Lump charcoal is available at select hardware, grocery and convenience stores, and it's wise to stock up at the start of the grilling season: charcoal is not always easy to procure at the last minute and if you're an avid backyard chef, you'll plow through a mountain of the stuff over summer. An eight-kilogram bag sells for just under $20, and will yield about eight grilling sessions. Unless you like the smell of napalm in the evening and your food to taste like an gas station, lighter fluid is strictly verboten. There are less toxic ways of lighting charcoal. Electric starters work fine, but it's not the most convenient method: you need an outdoor power outlet and an extension cord plus the pile of charcoal always gets messy when you remove the hot element (and have nowhere to safely put it). A lot of grill jockeys use a chimney, which is a metal contraption shaped like a beer stein. You put paper in the bottom, fill it with charcoal, light the paper and have a mug of hot coals in 30-odd minutes. Since the average retail chimney is on the small side, it's worth splurging on the larger version from Weber. Weber also makes special lighter cubes for firing up charcoal that are fast, odourless and non-toxic. These cubes, chimneys and just about everything you could possibly need for charcoal grilling are available at Ontario Gas BBQ (3310 Langstaff Rd., 905-761-8511, www.bbqs.com ), a barbecue mecca that's worth the trip to Concord. To light my 'cue, I used a clever technique gleaned from a fellow chef and charcoal enthusiast. Ironically, it involves propane, but in the form of a blowtorch, which can be purchased at any hardware store. First, take off the grate, build a mound of charcoal and open the bottom air vents. Light the blowtorch and burn four evenly spaced hot spots - 30 seconds on each should do it. As the hot spots grow, take lumps from the periphery and put them over top.
